Flavours from Around the World: Puerto Rican Rice and Beans

While we may not be able to hop on a plane and visit our favourite destinations right now, there are still plenty of ways we can keep the spirit of travel alive. One of those ways is through the food we eat.

The recipe for this Puerto Rican style rice and beans is an adaptation of one created by Skinnytaste - a website dedicated to providing delicious and healthy recipes. It is very easy to make and is the perfect way to familiarize yourself with traditional Caribbean cuisine.

The Ingredients

  • 1 cup of white rice
  • 1/2 onion
  • 1/2 cubanelle pepper
  • 3 cloves garlics
  • 1 bay leaf 
  • 1/4 cup chopped cilantro
  • 1 tsp olive oil
  • 5oz can pink or red kidney beans
  • 1/2cup canned tomato sauce
  • 1 1/2tbsp Sazon seasoning
  • 1/8tsp oregano
  • kosher salt (optional)
  • black pepper (optional)
  • avocado (optional)

Instructions

  1. Preparation of the rice may vary. For best results, follow instructions directly from bag
  2. Chop your pepper, cilantro, onions and garlic
  3. Pour the olive oil into a saucepan, add the chopped ingredients and bay leaf, and cook for 2 - 3 minutes on medium/high 
  4. Pour entire can of beans into the pan and give them a nice stir so they mix with the other ingredients
  5. Pour 3/4 cup of water into the pan
  6. Mix in the tomato sauce, sazon, oregano, salt, pepper and any other seasonings that you like and give it a nice stir
  7. Bring to a boil and place lid over the pan and then let it simmer on low for about 20 - 30 minutes
  8. Add the beans as a topping or side to your rice 
  9. Slice up an avocado to brighten it up and add some fresh flavouring (optional)

Whether this is your first or hundredth time tasting this dish, it never disappoints and will always remain a staple in Latin American culture.
